Ohishi Brandy Cask Whisky is a Japanese whisky distilled entirely from rice and aged in brandy casks.
The distillery uses 30% estate-grown rice, with the remaining 70% coming from the surrounding Kumamoto prefecture. Koi fish swim in the estate paddies and nibble the weeds. Because the rice ferments efficiently and cleanly, the distillery uses a pot still made from stainless steel rather than copper.
