The nose is unusual, giving the impression of smelling the inside of a barrel, with a quality likened to aged wines. Candied lemon zest, rich caramel and char sit alongside.
On the palate there is a sharp twist of cut lemon, then peppery spice that builds in warmth. Sweet, buttery caramel, typical of the Gimli style, comes through at the end.
