Pelter Single Malt Batch #2 (70cl, 46%)

This is Batch #2 from Pelter Distillery in Israel, a five year old single malt released in a numbered run of 2,000 bottles at 46% in a 70cl bottle. The wash was developed jointly with Alexander Brewery and double distilled in an alembic still. The spirit spent four years in first-fill bourbon casks from Jim Beam, then moved into two barrels: one that previously held Cognac, and one that held Pelter's own six year old brandy. The barrels were kept in a Syrian bunker in the winery's grounds. The colour is a delicate amber. Aromas and flavours include toasted almond, milk chocolate, butter candies, tobacco, honey nectar and citrus blossom. The finish is long.
