Pinhook Bourbondini High Proof is the 2022 vintage of a yearly Kentucky straight bourbon, distilled, aged and bottled at Castle and Key in Frankfort. It is bottled at 58% ABV (116 proof) in a 75cl bottle and is non-chill-filtered.
The release is named for Bourbondini, a bay colt foaled in May 2019, in keeping with Pinhook's habit of naming each release after a young horse. The mashbill is 75% corn, 15% rye and 10% malted barley, and the bourbon spent more than three years in new charred oak.
The nose is fresh fig, apple cider, marzipan and clove. The palate brings dried papaya, coffee, cinnamon and burnt caramel, and the finish is long, with rye spice and a measured sweetness.
