This is the 2021 High Proof Rye from Pinhook, aged for 3 years and bottled at 122 proof (61% ABV).
Pinhook issues a new bourbon and a new rye each year, and each release is tied to a promising young thoroughbred horse. Each vintage is blended and proofed individually to suit that year's barrels.
The nose is warm and nutty, with chocolate, black pepper and cedar wood. Black cherry and sorghum run through the palate, and the finish brings cinnamon and black liquorice.
