A single cask rum from Guyana, distilled in 2011 by Demerara Distillers Limited and bottled in 2023. It is made from molasses, fermented for four to five days, distilled on a pot still and aged for two years in American bourbon casks. It then spent nine years in Ferrand casks and one year in Big Peat Islay whisky casks. The nose shows date, ripe fig, harmoniously integrated smoke, peat, chamotte and ethereal notes. The palate is spicy-sweet, with tart fruit, smoked Black Forest ham, peat and tobacco, very balanced.
