A single cask rum from Demerara Distillers Limited, distilled in 2011 and bottled in 2023. It was fermented for 4 to 5 days and matured first for 2 years in American bourbon casks, then for 9 years in Ferrand casks, with a final year in Big Peat Islay whisky casks. The Big Peat finish is a smoky blend of several Islay whiskies. Dosage is 0.
On the nose there are date, ripe fig, harmoniously integrated smoke, peat, chamotte and ethereal notes. The palate is spicy-sweet, with bitter fruit, smoked Black Forest ham, peat, tobacco and a very balanced character.
