Plantation Panama One Time 2008 2021 Rum (70cl, 45.7%)

A Panamanian rum from the Alcoholes del Istmo distillery, distilled in 2008 and bottled in 2021. It is made from molasses, fermented for 2-3 days and distilled in a column still, then aged for 12 years in American bourbon barrels in the country of origin and finished for 1 year in Ferrand casks at Maison Ferrand. The edition is limited to 19 casks. The nose is fruity and spicy, with peach, red berries, orange peel and nutmeg developing into white pepper, lemongrass, pear and vanilla pudding. The palate is structured and complex, with red apple, honey, roasted hazelnut and a touch of toffee, and the finish is long with chocolate, allspice and liquorice.
