Plantation Trinidad 2008 2021 Chardonnay Chablis XO Rum (70cl, 49.5%)

A single cask aged rum from Trinidad Distillers Limited, distilled in 2008 and bottled at 49.5% ABV in a 700 ml bottle. Made from molasses, it was fermented for three days and distilled in a four-column still. It spent eleven years in American bourbon casks in its country of origin, then one year in Ferrand casks and one year in Chardonnay casks at Maison Ferrand. The nose has a fine bouquet with subtle honey notes, wood and smoke; the palate shows a delicate fruit-acid interplay.
