Plantation Trinidad 2011 Burgundy Finish XO Rum (70cl, 49.1%)

A single cask rum from Trinidad Distillers, distilled in 2011 and bottled in 2023. It is made from molasses on a column still, with fermentation of two to three days. The rum spent ten years in American bourbon barrels in its country of origin, then one year in Ferrand casks and one year in Burgundy red wine casks, the latter Pinot Noir casks. Dosage is zero. Cask number 25 is noted, with esters of 132 and a volatile compounds figure of 576. It is bottled at 49.1% vol in a 700 ml bottle.
