A single cask rum from Belize, distilled in 2006 from molasses with three to four days of fermentation. It spent fifteen years tropically ageing in Bourbon casks and four years continentally in Ferrand casks. Bottled at 60.4% vol in a 700 ml bottle, limited to 606 bottles, with esters of 144 g/hL AA, volatile compounds of 393 g/hL AA and dosage of 0 g/L. The colour is dark amber with golden tones.
Tasting Notes
Old Bourbon-like, with rich vanilla, warm cinnamon, ripe banana, golden honey, nutmeg, roasted almonds, leather, subtle cocoa, roasted oak and a floral note.
Powerful yet silky, with vanilla, buttery caramel, citrus, ripe pear, coconut, sweet spices, tobacco and roasted oak.
Very long and layered, with dried fruit, dark cherry, roasted hazelnut, coffee, honey, allspice and herbal notes.
