Planteray Isle of Fiji Double Barrel Rum (75cl, 40%)

Planteray Isle of Fiji Double Barrel is a molasses-based rum from the RUM Co. of Fiji Distillery, bottled at 40% in a 75cl bottle. It is made from local Fijian sugar cane, fermented for four to five days and distilled in both pot and column stills. The rum spends two to three years in bourbon casks in Fiji's tropical climate, then travels to France for a further year in French oak casks that previously held Ferrand Cognac. The nose opens on molasses, pear and varnish before turning fruitier and spicier, with apple, banana, nutmeg and vanilla. On the palate it is rich and round, with vanilla fudge, honey, ginger, prune and coconut. The finish is very long, with dried banana, bourbon and allspice.
