Rabbit Hole – Dareinger Founders Collection Heavy PX Sherry Cask Finished Solera Matured Kentucky Straight Bourbon (2024) (75cl, 50%)

Dareinger is a Kentucky straight bourbon from Rabbit Hole's Founders Collection, finished in Pedro Ximenez sherry casks and bottled at 50% ABV in a 75cl bottle. Wheated bourbon aged in toasted, charred barrels is rested in PX casks made by the Casknolia cooperage in Spain, and no more than fifteen barrels go into each blend. The mash bill is 65% corn, 25% wheat and 10% malted barley. It is bottled at cask strength without chill filtering. The name is a nod to Lewis Carroll, who liked portmanteau words. The nose offers custard, walnut, sherry and brown sugar. On the palate come cinnamon, tobacco, oak, caramel, blackcurrant, lemon and cherry, and the finish is medium to long and clean, with wine toffee and toasted pecans.
