Rabbit Hole – 'Heigold' Kentucky Straight Bourbon (47.5%)

Rabbit Hole Heigold is a high rye Kentucky straight bourbon from the Rabbit Hole distillery in the Nulu district of Louisville. It is bottled at 47.5% ABV (95 proof) and is never chill-filtered. The mash bill is 70% corn, 25% malted German rye and 5% malted barley. It is matured in hand-selected barrels that are toasted and charred over wood-fired flames, which gives a deep caramel colour. On the nose there are toasted malt, warm baking spices and vanilla, with hints of lemon and mint. The palate is creamy and full, with butterscotch and honey giving way to malted rye spice. The finish is long, with black pepper, cedary oak and a touch of bright citrus.
