Sipsmith London Dry Gin (75cl, 41.6%)

Sipsmith London Dry Gin is distilled in Hammersmith, London, on a copper pot still named Prudence. It uses ten botanicals from around the world, including Macedonian juniper, Bulgarian coriander seed, Spanish liquorice root, Chinese cassia bark and Sevillian orange peel. All the botanicals are distilled together in a single shot, with only water added afterwards, drawn from the Lydwell Spring. Each batch yields about 400 hand-numbered bottles. The nose is floral and citrusy, with orange blossom honey and mellow juniper. On the palate, piney juniper gives way to lemon curd, mandarin and marmalade, then cassia, cinnamon and a gentle peppery warmth. The finish is long, dry and zesty.
