Slyrs Bavarian Rye is a rye whisky from the Slyrs distillery at Schliersee in Upper Bavaria, bottled at 41% in a 70cl bottle without added colouring. Its mash is 55% rye malt, 25% wheat malt and 20% barley malt.
It is matured for at least three years in heavily charred American white oak casks, described as crocodile toasted because the charred surface recalls crocodile skin. The recipe was developed after a trip through the north-east of the USA, and the first release came in 2020.
The nose is led by ripe fruit with a touch of cinnamon. The palate is mild and sweet, with liquorice, cinnamon and allspice, and the finish is long, lightly dry and gently peppery.
