Slyrs – Fifty One Bavarian Single Malt (70cl, 51%)

Slyrs Fifty One is a Bavarian single malt from the Slyrs distillery at Neuhaus am Schliersee. It is a marriage of single malts of different ages from the same distillery, including whiskies from former sherry, port and Sauternes casks. Maturation begins in new 225-litre American white oak casks. The name comes from its strength of 51%, reached by reducing with mountain spring water. It is bottled in a 70cl bottle without added colour or chill-filtration, with herbal, nutty spice and a light touch of smoke. The nose has prunes, roasted chestnuts, moss and spruce, with a little chocolate. The palate is fresh and nutty with bitter herbs and cloves, and the intense finish is long and slightly dry.
