Sombra Ensamble is a joven mezcal made from Espadín agave in Santiago Matatlán, Oaxaca, and bottled at 51% ABV.
The agave is hand-harvested on the steep slopes of the Oaxacan Sierra. The hearts are slowly roasted in a rock pit over an oak fire, then ground, fermented and distilled.
The bouquet is of exotic fruits and spice.
