Sonoma Distilling Cherrywood Rye Whiskey (75cl, 47.8%)

This is a California craft rye from Sonoma Distilling Co., a grain-to-glass distillery in Sonoma wine country. The mash bill is 80% California rye, 10% California wheat and 10% barley smoked over Wyoming cherrywood. The cherrywood-smoked barley gives a gentle smoky depth that differs from the character of peated whiskey. The rye was aged for a minimum of two years and bottled at 47.8% ABV, in a 75cl bottle. On the palate it is dried figs, toasted almonds, brandied cherries and new leather.
