A Tasmanian single malt from Spring Bay Distillery, in a 70cl bottle. It is produced on the island's east coast by Cam and Suzy Brett and matured in sherry casks.
The water comes from East Coast Tasmanian rainfall, which gives the whisky a soft, slightly maritime quality. A small copper pot still is used for distilling and is credited with a rich mouthfeel.
The sherry casks give a fruity, spicy profile.
