Nova is an Australian single malt from Starward, matured for two years in Australian red wine barrels. The casks come straight from wineries that make Shiraz, Pinot Noir and Cabernet, and they are only lightly charred or steamed before filling, so the character of the wine comes through in the spirit.
It is bottled at 41% in a 750ml bottle. The nose is full of red fruit, with strawberries and a Port-like mix of fruit and nuts. Honey, cinnamon and more red fruit lead the palate, with a creamy, nutty texture and a touch of tannin. The finish is toffee with walnuts.
