Starward – Solera Australian Single Malt Whiskey (70cl)

Starward Solera is an Australian single malt from Melbourne, in a 700ml bottle. It was the distillery's first whisky, made with Australian malted barley fermented with brewers' yeast and matured in Apera barrels, an Australian fortified wine similar to Sherry. The name refers to the solera method, in which a fraction of each young cask is blended with more mature spirit, so a touch of the first cask remains in every bottle made today. Melbourne's widely varying daily temperatures mean the whisky takes flavour from the wood in a shorter time. The nose is bright with tropical and orchard fruit, caramel and vanilla. The palate brings creme brulee, banana, figs and sweet spice, and the finish is juicy with a lingering dry spice.
