Sullivans Cove Old & Rare TD0346 is a 16 year old Tasmanian single cask whisky, distilled in December 2008 and bottled in February 2025 at 47.3%. It matured in a single 300L French oak second-fill cask and yielded 447 bottles.
The second-fill cask keeps the distillery's own spirit character in front, with a softer oak influence alongside dark jammy berries, aromatic spice and bright fruit.
The nose is honeycomb and maple syrup with coriander seed, Assam tea, pimento and dried orange peel. On the palate come sweet espresso-like tannin, vanilla bean paste, honey muffins and candied fruit, then cola, sherbet and glacé cherry. The finish is waxy and long, with black tea, cardamom, cinnamon and caramelised banana.
