Sullivans Cove Double Cask DC122 is a Tasmanian single malt matured in a combination of French and American oak. Its youngest component was aged for 7 years and its oldest for 20. It was bottled at 47.8% ABV and yielded 1,460 bottles.
Double Cask is made by the distillery's manager and sensory team, who marry the qualities of the two oak types in each small batch.
The nose is fruit-led, with lychee, Granny Smith apple, coconut, lime and banana pie. On the palate come rich honey, jasmine and orange blossom, creamy rice pudding and condensed milk, lifted by kaffir lime and white pepper. The finish is long and dessert-like, with apricot yoghurt, white chocolate, golden syrup and orange-cinnamon tea cake.
