Double Cask DC122 is a Tasmanian single malt from Sullivans Cove, bottled at 47.8% in a 70cl bottle. It matured in a combination of French and American oak, and its youngest component is 7 years old while its oldest is 20.
The blend was created by Distillery Manager Heather Tillott and the Sullivans Cove Distillery Sensory Team, and this batch yielded 1,460 bottles.
The nose runs from lychee, Granny Smith apple and coconut to banana pie and blueberry pie. Honey, jasmine, orange blossom and rice pudding lead the palate. The long finish is dessert-like, with apricot yoghurt, white chocolate and golden syrup.
