Sullivans Cove French Oak Ex-Chardonnay Single Cask SC0814 is a Tasmanian single malt matured for 7 years and 7 months in a single French oak cask that previously held Chardonnay. It is a limited release exploring the link between Australian wine and whisky maturation.
The cask was filled on 22 September 2018 and decanted on 6 May 2026, giving 443 bottles at 50% ABV in 70cl bottles. The Chardonnay cask brings vibrant fruit alongside the structure of French oak, and the whisky has a creamy texture.
The nose offers blackberry syrup, strawberry jam and warm scones. The palate brings rum and raisin with chocolate-coated pineapple, and the finish is long and juicy, with biscuit, treacle tart and tropical fruit.
