Sullivans Cove – French Oak (Second Fill) Single Cask TD0374 (70cl, 46.3%)

This is a single cask Tasmanian single malt from Sullivans Cove, bottled at 46.3% in a 70cl bottle. Cask TD0374 was distilled in October 2012 and decanted in July 2025, after 12 years and 8 months in a 300-litre French oak ex-tawny cask. The cask had previously held an earlier batch of Sullivans Cove single malt, making this a second-fill maturation, chosen to show the character of the French oak while the distillery's own spirit stays in front. The nose offers brown sugar, molasses, dark rum, spice, cherry tart and cocoa. The palate is light, syrupy and subtle, with vanilla cream, bubble gum, watermelon and cotton candy. The finish is long and creamy, with strawberry, pink donut, apple turnover and coconut icing.
