Hibiki 21 Year Old is a Japanese blended whisky from Suntory, bottled at 43% ABV in a 750ml bottle. It combines single malts and grain whiskies, each aged for at least 21 years.
The blend draws on three distilleries: Yamazaki for the malts, Hakushu for lighter, herbaceous malts and Chita for the grain whiskies. Some of the whisky is aged in Mizunara oak, which gives notes of sandalwood and incense.
Tasting notes describe kumquat, jasmine, cooked fruit, banana and blackberry on the nose. The palate moves from gentle floral sweetness to honeycomb, dried apricot and spiced sandalwood, and the long finish carries Mizunara wood and dried fruit.
