Hibiki 21 Year Old is a blended Japanese whisky from Suntory. It marries malt from Yamazaki and Hakushu with grain from Chita, every component aged at least 21 years. The blend uses sherry and Mizunara oak casks, and is presented in a 24-facet decanter with a washi paper label in a presentation box. It is rich, elegant and complete, balancing deep fruit and sweetness with spice, oak and a delicate wisp of smoke. The nose shows caramelised nuts, blackcurrant, pear, vanilla, dark toffee and sherry spice, with a touch of lemon. The palate is buttery and full, with dark cherry, sweet caramel, oak, wood spice and a wisp of smoke. The finish is long and lingering, with sandalwood, dried fruit and a hint of smoke.
