Talisker Skye is a single malt from Talisker, the oldest working distillery on the Isle of Skye. The distillery was founded in 1830 by the brothers Hugh and Kenneth MacAskill. After a fire destroyed the still-house in 1960, it was rebuilt with exact replicas of the original stills, including U-shaped lye pipes and traditional worm tub cooling. The nose is toffee and vanilla ice cream, turning honeyed, with a little coastal influence and restrained smoke. On the palate come honeyed toasted oak, apple, lemon and lime, a little pepper and fennel seed. The finish is drying, with hints of spice and smoke.
