The Heart Cut Fielden #16 is an English rye whisky at natural cask strength, 56.6%, in a 500ml bottle. It was finished for just over two years in a 45-year-old ex-solera Oloroso cask from Sanlúcar de Barrameda, and 1,109 bottles were filled.
The mashbill is 100% rye: three quarters heritage landrace rye grown in Oxfordshire, with floor-malted rye from Warminster Maltings.
The nose is salted caramel, golden honeycomb and a hint of honeysuckle. The palate brings vanilla ice-cream richness, overripe apricot, pecan pie and banana chip, then toasted walnuts, oak sawdust and kola cubes. The finish ends with a whisper of smoked sea salt.
