The Quiet Man 12 Years Old Sherry Finished is a triple distilled Irish single malt, bottled in small batches at 46% in a 70cl bottle. It is bottled in Derry and is non-chill-filtered.
The whiskey is matured in bourbon casks and then finished in Oloroso sherry casks.
On the nose there is melon, raisins and vanilla ice cream, with a slight hint of sawdust. The palate opens with herbal notes and fresh apple, before milk chocolate and the sweetness of spiced rum appear. The finish is long, with barbecued pineapple and chocolate-coated peanuts.
