The Whistler Dark Symphony Cognac Cask Finish (43.1%)

This is an Irish blend from The Whistler, a brand made by Boann Distillery in the Boyne Valley, north of Dublin. It combines roughly 20 per cent single malt with 80 per cent grain whisky, is triple distilled and is bottled at 43.14% ABV. The spirit first matured for three to four years in first-fill bourbon casks. It then spent at least twelve months in Cognac VSOP casks prepared by the N.E.O.C. (New Era Oak Cask) process, in which the casks are scraped, rebuilt and lightly toasted. This finish adds a deeper fruit character.
