Thomas S. Moore Sherry Cask Finished is a Kentucky straight bourbon made from the high-rye recipe of Barton 1792 Distillery. It was aged for five to six years in new charred oak, then moved into sherry casks for a further one to four years.
The range honours Thomas S. Moore, the bourbon pioneer who built that distillery. Each label carries a racehorse, a reference to his early brand Belle of Nelson, named for the winner of the 1878 Kentucky Oaks.
It is bottled at 98.7 proof. The nose shows sweet fruit and toasted nuts, with figs, a little spicy tobacco and cedar. The palate is sweet, with fruit and nuts.
