Tomatin 2011 Single 1st Fill PX Sherry Cask – 2026 Year of the Horse (56.5%)

This is a single cask Tomatin bottled to celebrate Chinese New Year 2026, the Year of the Horse. It was distilled on 10 February 2011 and matured in a first-fill Pedro Ximénez sherry cask, which gave 817 bottles at 56.5%. The nose opens with orange peel and dried cranberries, then moves towards honeycomb and candyfloss, with cinnamon, tiramisu, mulled wine and even a touch of jalapeño. The palate is more structured than the nose suggests, with sugared almonds, toffee apples, raisins and salted liquorice. The finish is long and round, with a lasting baking-spice note.
