Tomatin – Cù Bòcan Creation #8 (46%)

This is the eighth edition of Tomatin's experimental peated Cù Bòcan Creation series. It brings together spirit matured in Canadian icewine casks with whisky from fresh Spanish Verdejo casks. It is bottled at 46% with natural colour, without chill-filtering, and limited to 3,600 bottles. The peating level is given as 15 ppm. The nose has poached pear, apricot jam, pineapple syrup and candied peach, with gentle heather smoke, citrus peel, fennel seed and almond pastry. The palate opens with silky honeyed sweetness, then lime zest, green grapes and tropical fruit syrup with earthy smoke. The finish moves from sweet wine richness into smoky honey, soft oak spice and lingering citrus peel.
