Tomintoul Pedro Ximénez Sherry Cask Finish is a small-batch Speyside single malt created by Master Distiller Robert Fleming, bottled at 40% ABV in a 70cl bottle. It is first matured in ex-bourbon American oak barrels. Selected casks are then married and finished in Pedro Ximénez sherry butts from Andalucía, Spain.
The nose brings sweet treacle, dried figs, malt loaf and raisins, with cinnamon and clove. The palate moves from fruitcake and banana bread to dates, marzipan, toasted walnuts and sultanas. The finish is warm, with pastry, cocoa and syrup-cake sweetness giving way to oak and a faint tobacco note.
