Two Stacks Smoke & Honey Bourbon Finish (70cl, 55.7%)

This is an Irish single malt from Two Stacks, bottled at 55.7% in a 70cl bottle. It combines double-distilled fruity malt whiskey with peated malt, and it has a four-month finish in a first-fill bourbon cask. The cask was prepared in an unusual way. It first held American whiskey with honey liqueur, then a 13% rye-rich barley wine from Dot Brew for four months, which softened its sweetness and added a nutty caramel character. The whiskey is non-chill-filtered and has no added colouring. Burnt toffee, smoky honey, vanilla and a note of sea spray on the nose. Honeycomb, spicy vanilla, salted caramel and cinnamon on the palate, with nutty smoke. A long finish of sweet campfire smoke and spice.
