Very Olde St. Nick 'Faith + Conviction' is a straight rye from Preservation Distillery in Bardstown, Kentucky, bottled at cask strength without dilution at 54.6% ABV. It belongs to the Very Olde St. Nick line.
The base is Kentucky rye aged for 8 years, blended with a handful of the distillery's vintage casks. The name comes from a five-day session in which the distillery's owner nosed and tasted barrels from its collection to build the blend. Bottles are individually numbered.
The tasting notes describe red currants, plum, brown butter and cola on the nose. The palate brings black raspberry, prune, rye spice and chocolate wafers, and the finish is medium to long, with milk chocolate, leather and hazelnut.
