Willett Family Estate 8 Year is a wheated bourbon, aged for eight years in first-fill American oak and bottled at 108 proof without chill filtration. It is a 2025 release.
The nose is sweet and pastry-like, with candied almonds, dark brown sugar and maple, and raspberry skins, fig and gentle cinnamon and clove underneath. The palate is plush, with heavy oak, tobacco, cinnamon, a buried note of pomegranate and raisin, and a faint chocolate edge.
The finish is of medium length, moving to oak tannins, burnt caramel and fading baking spice.
