Wyoming Whiskey Double Cask is a bourbon in a 75cl bottle, bottled at 50% ABV (100 proof). The mash bill is 68% corn, 20% wheat and 12% malted barley.
It spends its first five years in new charred oak, which makes it a bourbon, and then matures further in decades-old casks that previously held Pedro Ximenez sherry. That second maturation adds a touch of sweetness.
The colour runs from copper to mahogany. The nose brings dried apricot, mission fig and dried date, and the palate stewed prune, black raisin and candied orange peel over vanilla butter cream and toffee. The finish is dark dried fruit followed by warming brown baking spices.
