Wyoming Double Cask is a small-batch bourbon bottled at 50% ABV in a 750ml bottle. It spends five years in new charred American oak, then moves into decades-old Pedro Ximenez sherry casks to finish. Each release draws on no more than five of those casks.
The mashbill is 68% corn, 20% wheat and 12% malted barley, from a distillery founded in 2009 as the first legal one in Wyoming.
Dried apricot, fig, prune and candied orange peel lead the nose, over vanilla and toffee. The palate is sweet and soft, with dark berries, vanilla, black raisins and dates. The finish is long, with cinnamon, toffee and dried stone fruit.
