Yuu Baal Espadín Madrecuishe Tobalá Joven Ensamble Mezcal Artesanal (75cl, 45%)

This is a joven ensamble mezcal artesanal from Miahuatlán de Porfirio Díaz in Oaxaca. Espadín, Madrecuishe and Tobalá agaves are cooked, milled, fermented and distilled together as one batch rather than blended afterwards. The piñas are roasted in an underground conical stone pit oven, crushed by tahona, fermented with wild yeast in open wooden vats and double distilled in small copper stills. It is unaged and released in numbered small batches by Yuu Baal, a Oaxacan social enterprise working with producer families. Bottled at 45% in a 75cl bottle. The nose opens with wet stone, spearmint and green vegetation, then guava, powdered sugar and honey behind restrained campfire smoke.
