1792 Full Proof is a Kentucky straight bourbon from Barton 1792 Distillery in Bardstown, in a 75cl bottle. It is bottled at 125 proof (62.5%), the same strength at which the spirit went into the barrel, which is where the name comes from.
The mash bill is high rye, roughly 75% corn, 15% rye and 10% malted barley. It spent about 8.5 years in new American oak with a number 3.5 char, and is non-chill-filtered, passing only through a plate and frame filter.
The nose brings caramelised oak, vanilla bean, brown sugar and toasted nuts, with cranberry and raspberry behind. On the palate come dark chocolate, cinnamon, dark cherry and roasted coffee, with a sharp rye spice. The finish is long, warming and oily.
