This is a single pot still Irish whiskey from Achill Island Distillery, in a 70cl bottle at 47% with no added colouring. It is made from malted and unmalted barley together with oats, matured in first-fill bourbon casks and then finished for 18 months in Oloroso sherry casks. It is distilled, matured and bottled on Achill Island.
The nose has figs and peaches, then honey and the spice of toasted oak. The palate is soft and velvety, opening with peach and cream before a fuller stone fruit flavour develops. Molasses sweetness stays in the finish, with a touch of liquorice.
