Ardbeg Dark Cove is the 2016 Committee Release, made to coincide with the Islay festival. It is a single malt made with whiskies matured in sherry casks and bourbon wood, in a 70cl bottle at 55% ABV.
The nose opens meaty, earthy and spicy, with dark chocolate, orange, treacle toffee, coffee and oak against a smoky background and a floral note. The palate is almost tart, with raisins, dates, ginger and pepper, then smouldering charcoal, wood polish and creosote, leading to cured smoked ham and squid ink noodles. The finish is long, spicy and rich, with toffee, coffee and tar.
