A 13 year old Islay single malt from Ardbeg, released for the Committee in 2022 and matured in ex-bourbon casks. It is bottled at 49.4% ABV.
Fermutation takes its name from the longest fermentation in the distillery's history, three weeks, which came about when a boiler broke down.
The nose pairs tropical fruit, including pineapple, guava, papaya and fermented mango, with clean smoke, vanilla and a yoghurt tang. The palate is silky, with pineapple syrup, ripe peach, grilled citrus, honeyed malt and a pepper edge. The finish is long and gently smoky, with citrus peel, peat ash and a last note of tropical fruit.
