Eldorado Second Edition is an Australian single malt from Bakery Hill, made from its unpeated Classic spirit. After the second distillation it spent 18 months in a Seppeltsfield Barossa Valley Apera cask, then just under three years' worth more, a little over, in an American oak ex-bourbon cask.
The maker describes the sherry influence as more intense and vibrant than in the first release. It is bottled at 55% ABV in a 50cl bottle, and the edition runs to 345 individually numbered bottles.
