Balcones Baby Blue is a Texas corn whisky made at Balcones Distilling in Waco from 100% roasted blue corn. It is bottled at 46% ABV in a 75cl bottle, never chill-filtered and with no added colouring.
The whisky is matured in used oak casks and is intentionally youthful, which keeps the corn in front. The roasted blue corn gives an oily, viscous spirit, and Baby Blue is described as the first Texas whisky on the market since Prohibition.
The nose offers melted butter, kettle corn, vanilla, toffee, cinnamon and nutmeg. The palate brings tropical fruit, brown sugar, cotton candy and sweet tea, and the medium-long finish is warming, with cinnamon, leather spice and mint.
