Balcones Texas Pot Still Bourbon is a straight bourbon from Balcones Distilling in Waco, Texas, bottled at 46% ABV (92 proof) in a 750ml bottle.
The mashbill is roasted blue corn, Texas wheat, Texas rye and malted barley. It is distilled in a Forsyth copper pot still with a helical lyne arm, then matured for at least 24 months in new charred American oak.
The nose brings honeycrisp apple and toasted oak, with kettle corn, graham cracker, cocoa and oiled leather. The palate is dry rather than plush, with honey, sweet cream and candied pecans over cocoa, cornbread, leather and sandalwood. The finish starts soft and sweet, then fades tannic with lingering spice, char and dry wood.
